Chocolate Chunk, Banana & Coconut Bread (GF, DF, RSF)

Give Ash's go-to treat a try: delicious gluten free, dairy free, refined sugar free banana bread - we promise, it sounds healthy but tastes naughty.

INGREDIENTS:

- 1 tsp cinnamon

- 1 tsp vanilla bean/extract

- 1 heaped teaspoon of baking powder

- 2/3 cup buckwheat flour

- 2/3 cup almond meal

- 2 tbsp chia seeds

- 2 eggs

- 1/4 cup shredded coconut

- 1/4 cup rice malt syrup

- 1/2 cup coconut oil

- 1/4 almond milk

- 2 bananas

- 1/2 block dark chocolate 80% or carob

METHOD:

1. Preheat oven to 180degrees

2. Mash the 2 bananas in a bowl and set aside

3. In a large mixing bowl combine all dry ingredients

4. Add the oil, rice malt, mashed banana and eggs and stir until well combined

5. Fold through the dark chocolate pieces

6. Place in a lined baking tin and bake for 40-45 minutes (depending on how deep your baking dish is)

7. Place a knife through the cake to see if it is cooked through
