Delicious Dumplings

Morgan's famous Delicious Dumpling recipe! If you know Morgan, you know she loves an asian meal.

Essential Skills; patience, spare time & small fingers (none of which we have, but nonetheless.. YUM!)

- 150g Plain flour

- 80g Boiling water

- 200g Pork mince (Vegan alternative: blend 100g chickpeas & 100g hard tofu)

- 1 Leaf (30g) wombok, chopped finely

- 1 Spring onion, chopped finely

- 2 Baby king oyster mushrooms, chopped finely

- 1 Clove garlic, chopped finely

- 1 Clove ginger, chopped finely

- 2tbsp Soy sauce

- 1tbsp Shaoxing (Chinese rice wine)

- 1tsp Vegetable oil

- ½ tsp Seasame oil

- ¼ tsp Salt

- ¼ tsp Sugar

- 1 tbsp Soy sauce

- 1 tbsp Black vinegar

- ½ tsp Chilli oil

1. Add the flour into a small mixing bowl. Make a small well in the centre of the flour. Add boiling water to centre of the flour and use a chopstick or fork, mixing the flour and water until it begins to clump together

2. Knead the dough for 5-7 minutes on the bench surface until the dough begins to become smooth and pliable

3. Cover the dough with plastic wrap and allow it to rest for 20 minutes

4. Place mince/vegan alternative in a bowl and mix in the seasoning. Mix well

5. Add remaining of the filling ingredients to the bowl, mix well

6. Roll out the dough into one long skinny cylinder shape and cut into 24 pieces (gnocchi shape/size for each piece)

7. One by one, use the heel of your hand and squish/flatten the gnocchi shaped dough into small round discs

8. Dust your work surface with flour and using a rolling pin, roll out each piece evenly into small thin circles

9. Fill each dough circle with 1tbsp of filling, fold the dough over into a half moon shape and bind edges together with a touch of water.

10. Place the dumplings in a medium head frying pan with 2 tbsp vegetable oil. When one side turns golden brown, add 60ml of water, cover the pan with a lid, cook for 7minutes.

11. Serve with dipping sauce
